These Sweet and Spicy Stove-top Beans are quick and easy to make. This great dish is not only packed full of protein and nutrients but it pairs with almost anything!
- 4 cups (32 oz) Black Beans (cooked or canned)
- 1 pkg Smoked Tofu, diced small
- 1/4 cup Molasses
- 1/4 cup Onion, diced
- 4 Tbsp Cane Sugar
- 2 Tbsp Dijon Mustard
- 5 Tbsp Ketchup
- 2 Tbsp Hot Sauce (I use Frank’s)
- Pinch of Salt
Heat some oil in a medium sized pot on med-low heat. Fry the tofu until 3/4 crispy and add the onion. Cook until onion becomes translucent. In the mean time, prepare the sauce by mixing the remaining ingredients (except the beans) in a bowl. Pour sauce into pot with the onion and tofu and mix well. Add the beans and mix well. Let simmer for a few minutes until you reach the desired consistency. Mash up the beans a few times to thicken the sauce and Voila! Ready to serve.
