Who says that vegans have to miss out on the traditional western meals. This vegan “Meatloaf”, or Lentil Loaf, is a family favorite!
Lentil Loaf Ingredients:
- 1 1/3 cup Vegetable Broth
- 1/2 cup Lentils (rinsed thoroughly)
- 1 cup Water
- 3/4 cup Quinoa
- 1 cup Quick Oats
- 1/3 cup Ketchup
- 5 Tbsp Tamari (soy sauce)
- 2 Tbsp Tahini
- 2 Tbsp Molasses
- 2 Tbsp Chia Seeds
- 2 Tbsp Nutritional Yeast (optional)
- 1 Tsp Oregano
- 1/2 Tsp Sage or Thyme
Topping Ingredients:
- 1/3 cup Ketchup
- 2 Tbsp Molasses
Directions:
- Bring the Vegetable Broth and Lentils to a boil and simmer for 10 – 15 min. Add water and Quinoa and cook for another 10 min and remove from heat.
- Pre-heat the oven to 375F
- Combine the remaining ingredients and add to the Lentil/Quinoa mixture. Pour mixture into a bread pan and add the topping.
- Bake uncovered for about 25 min.
- Allow to cool for 5-10 min before serving
