Who says that vegans have to miss out on the traditional western meals. This vegan “Meatloaf”, or Lentil Loaf, is a family favorite!

Lentil Loaf Ingredients:

  • 1 1/3 cup Vegetable Broth
  • 1/2 cup Lentils (rinsed thoroughly)
  • 1 cup Water
  • 3/4 cup Quinoa
  • 1 cup Quick Oats
  • 1/3 cup Ketchup
  • 5 Tbsp Tamari (soy sauce)
  • 2 Tbsp Tahini
  • 2 Tbsp Molasses
  • 2 Tbsp Chia Seeds
  • 2 Tbsp Nutritional Yeast (optional)
  • 1 Tsp Oregano
  • 1/2 Tsp Sage or Thyme

Topping Ingredients:

  • 1/3 cup Ketchup
  • 2 Tbsp Molasses

Directions:

  • Bring the Vegetable Broth and Lentils to a boil and simmer for 10 – 15 min. Add water and Quinoa and cook for another 10 min and remove from heat.
  • Pre-heat the oven to 375F
  • Combine the remaining ingredients and add to the Lentil/Quinoa mixture. Pour mixture into a bread pan and add the topping.
  • Bake uncovered for about 25 min.
  • Allow to cool for 5-10 min before serving
